The beginning of travel

Located in the heart of the Maldives, Sun Siyam Resorts invites guests to embark on a culinary adventure like no other. Deeply rooted in the island’s rich culture and heritage, Maldivian cuisine celebrates the abundance of fresh seafood and local ingredients such as grilled fish (Fihunu Mas) or Boashi Hikikoh prepared by Chef Ahmed Ali at Sun Siyam Vilu Reef or fish curry. created by Chef Ashan Madusanka at Islander’s Grill, one of Sun Siyam Iru Fushi’s 14 restaurants and bars.

The fish used in these dishes, caught by rod and line (therefore sustainably), is sourced directly from fishermen living on the neighboring islands, which is also supported by Sun Siyam Resorts as part of its Sun Siyam Cares initiative, a sustainable commitment to the Maldivian population and community. . Coconuts, leaves counterpart (evergreen palm with vanilla and hazelnut flavors) and most of the spices used are planted and harvested directly on the agricultural islands belonging to Sun Siyam Resorts. These spices are also the essential ingredients for the delicious cocktail creations of Sommelier and Beverage Manager Kusal Ashen of “No Mistake Bar” at Sun Siyam Iru Fushi.

Cooking lesson

The best way to learn how to prepare a dish is to cook it directly with a professional. Guests of Sun Siyam Iru Fushi have the opportunity to learn how to proceed step by step during cooking classes. Most of the ingredients come from the nearby farming islands, which guests can visit on their own on an excursion. The highlight of any cooking class is of course the shared pleasure at the end. If you want to cook these dishes at home, simply take these spices with you in your luggage.

These hands-on lessons, led by our experienced chefs, offer a unique insight into local culinary techniques and traditions, allowing guests to master the art of preparing authentic Maldivian specialties. Chef Ahmed Ali, originally from the Maldives, loves the cuisine of his native country. He started cooking at the age of 12 for his parents and has worked in various luxury hospitality establishments for almost 38 years – and has now been running the restaurant at Sun Siyam Vilu Reef for three years. Explains: “Fresh seafood is especially delicious here. But I also like the combination of our spices. I usually use a combination of dried chili, garlic and Rampa leaves (the local name for Pan-dan) in my dishes. And of course my favorite dish is also the fish dish: “Kandu Kukulhu, tuna curry from the Maldives“.

New Maldivian restaurant and chef in residence

Siyam World, a luxury 5-star resort from the Sun Siyam Resorts group, opened the Maldivian restaurant Kaage in late 2023, a gastronomic paradise where the spirit of the islands is celebrated in every dish. This new dining experience promises to transport guests on an exquisite journey through the rich and varied flavors of the Maldives. The resort will host Theodoros Katsoultos, a Michelin-starred chef based in Saudi Arabia for the Eid celebration. He worked in Spain in three restaurants with 3 Michelin stars. For two years, he has been bringing his culinary experience to Saudi Arabia, especially to Jeddah, Riyadh and AlUla. He currently serves as head chef at Chez Bruno in Riyadh, a Michelin-starred establishment since 1990 specializing in French cuisine.

Before that, Siyam World is preparing to celebrate Easter in an unforgettable way, with an atmosphere inspired by the fantastic world of “Rise of the Guardians” and experiences rich in entertainment and culinary delights until April 5, 2024. The resort celebrates gastronomy with the presence of British chef Brad Carter in an exclusive residence. As a founding member of Birmingham’s Slow Food movement and a proud supporter of Ark of Taste, chef Brad Carter is on a mission to champion the best of British produce. From using pure Droitwich salt to creating exclusive delicacies such as Sea Truffle Caviar with Exmoor Caviar, the chef’s culinary magic knows no bounds.

The new chef at Sun Siyam Iru Veli

Sun Siyam Iru Veli has just welcomed Christof Egli as the resort’s new Executive Chef, bringing with him a wealth of culinary experience and a passion for diverse cuisines. Chef Christof Egli’s culinary journey began in Switzerland, his native country, where he developed his love for food at a young age. His early career in a small kitchen brigade allowed him to master the basics of culinary preparation, which led him to various experiences in renowned establishments around the world. He was able to apply his talents in prestigious hotels in Switzerland, Canada, China, Jordan and Abu Dhabi before entering the gastronomic scene in the Maldives.

Emad Kandeel serves as a pastry chef at Sun Siyam Iru Veli. In this role, he creates culinary delights that captivate the senses, combining his rich cultural influences with international flair to create a unique and unforgettable dining experience for guests of this luxury island retreat.
